Ingredients

Spaghetti for 2
10-20 king prawns
2 garlic cloves,  peeled and finely chopped
1 large bunch of flat leaf parsley (or basil)
1 dried chilli, seeded
3 tbsp extra virgin olive oil
2 tsp anchovy puree
250g fresh ripe tomatoes, peeled, seeded, and coursely chopped
120ml (4 fl oz) dry white wine
Sea salt and freshly ground black pepper
Parmesan

Preparation

Heat a pan of boiling water for the pasta. Chop the garlic, parsley and chilli by hand or in a food processor. Add spaghetti to boiling water. Put the oil in a large saute pan and add the parsley mixture (garlic & chilli). Saute for 1 minute over a low heat, stirring very frequently, then mix in the anchovy puree. Add the prawns and tomatoes. Turn them over once or twice in the pan and then splash with the wine and cook for five minutes. Season with salt and black pepper. Add to pasta and serve immediately with parmesan sprinkled on top.
